New stars for Taste of Sligo Spring Feast

Eithna O’Sullivan, from the iconic Eithna’s By the Sea restaurant is one of the Sligo Food Trail chefs taking part in the “Taste of Spring Feast” on Friday 20th April 2018 at the Radisson Blu Hotel & Spa

Award winning chef Eithna O’Sullivan, from the iconic Eithna’s By the Sea restaurant in Mullaghmore,  is joining the star studded chef team for Sligo Food Trails ‘Taste of Sligo’ Spring Feast. The gala event takes place on Friday 20th April 2018 at the Radisson Blu Hotel & Spa. Six of Sligo Food Trail’s top chefs work together to create a mouth watering nine course banquet for the lucky guests. This is a serious celebration of Sligo food and an unusual showcase for the talented chefs.

“Unsurprisingly I’m taking on the fish course”, smiles Eithna whose restaurant has been crowned Seafood Restaurant of the Year, “I’m really looking forward to showcasing the wonderful seafood we have here in Sligo and introducing my style of fish cookery to a new audience”. The timing of the Spring Feast is just perfect for Eithna who opens her restaurant annually ‘with the season’ when the fishing boats are heading out and the first of the local vegetables are peeping their heads above the soil.

Secret Menu

Exact details of the menu are a closely guarded secret but if the Harvest Feast is anything to go by, it will be a gastronomic extravaganza. Nine meticulously prepared and beautifully presented courses are on that secret menu, using the best of local produce. The talented team of chefs who are taking charge of this exciting event are: Joe Shannon (Radisson Blu Hotel & Spa), Marcin Szczodrowski (Eala Bhán Restaurant), Lee Mastin (The Draft House Gastro Pub), Alan Fitzmaurice (The Glasshouse), Joe McGlynn (Hooked) and Eithna O’Sullivan (Eithna’s By The Sea). Historic Temple House and Cawleys of Tubbercurry are supplying handmade canapés and a host of local suppliers and producers make the menu.
